The DATE SUGAR collection is an invitation to reimagine pastry in a more natural, wholesome way. At Maison Amarella, we created a unique macaron shell recipe with date sugar which is rich in fibre and minerals, bringing a subtle sweetness and a softer texture.Inspired by the various flavour combinations woven through our story, the DATE SUGAR collection explores different taste territories combining the sweet flavour of dates with pistachio, rose, ginger and chocolate.

PURE DATETwo soft shells made with date sugar and filled with a white chocolate ganache combined with date molasses.


GINGER DATEFilled with a delicate white chocolate ganached infused with ginger, with a candied ginger cube in the center.


PISTACHIO DATEA white chocolate ganache combined with 100% pure pistachio paste and date molasses. 


CHOCOLATE ORANGE DATEFilled with a dark chocolate ganache mixed with pure orange fruit puree and a candied orange cube in the center.


ROSE DATEThis macaron is filled with a white chocolate ganache infused with 100% pure organic rose water and date molasses.  


HAZELNUT DATEAn indulging macaron filled with a creamy white chocolate ganache mixed with the highest quality hazelnut paste from the Piedmont in Italy, and date molasses.

DATE: sugar, date paste, ALMONDS, EGG whites, date molasses, date powder, natural brown coloring (apple extract: contains SULFITES, maltodextrin).


ROSE DATE: ALMONDS, sugar, EGG whites, date powder, organic rose water, natural red coloring (beetroot red E162, maltodextrin, citric acid E330).


ORANGE DATE: Sugar, ALMONDS, dark chocolate couverture (cocoa paste, sugar, cocoa butter, emulsifier: rapeseed lecithin, natural vanilla flavoring), EGG whites, whole CREAM, date powder, BUTTER, date syrup, natural orange food colouring (maltodextrin, paprika oil extract E160c, glycerol E422, citric acid esters of mono- and diglycerides of fatty acids E472c, ascorbic acid E300, alpha-Tocopherol E307).


PISTACHIO DATE: ALMONDS, sugar, EGG whites, PISTACHIO paste, date powder, natural brown coloring (apple extract: contains SULFITES, maltodextrin), chlorella.


GINGER DATE: sugar, ALMONDS, white chocolate couverture (sugar, cocoa butter, whole MILK powder, emulsifier: rapeseed lecithin, natural vanilla flavoring), EGG whites, whole CREAM, date powder, candied ginger, ginger powder, date molasses, natural yellow colouring (maltodextrin, acacia gum E 414, MCT oil, sorbitol syrup E420 (ii), Sunflower Oil, Beta-Carotene E160a (iii), Citric acid E330, ascorbic acid E300, alpha-tocopherol E307, tocopherol-rich extract E306).


HAZELNUT DATE: ALMONDS, sugar, HAZELNUT paste, date powder, natural brown coloring (apple extract: contains SULFITES, maltodextrin), natural orange food colouring (maltodextrin, paprika oil extract E160c, glycerol E422, citric acid esters of mono- and diglycerides of fatty acids E472c, ascorbic acid E300, alpha-Tocopherol E307).

Store the macarons in their original box for up to 5 days in the refrigerator between 3-5°C. We recommend taking them out at least 20 minutes before serving for optimal texture and flavour.

Freezing is an integral part of the macaron production process. It allows the macarons to mature, improve in quality, and fully preserve their flavours. After delivery, the macarons must not be refrozen.
